Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tsp garlic powder (optional)
1 tsp paprika (optional)
2 tbsp cooking oil or melted butter (for searing)
For the Filling:
4-5 pcs longganisa (remove meat from casing)
1 to 1 1/2 cups grated quick-melt cheese or mozzarella
1 small onion, finely chopped (optional)
3-4 cloves garlic, minced (optional)
1 tbsp cooking oil (for sautéing)
For the Sauce (optional):
1/2 cup all-purpose cream or heavy cream
1/4 cup grated cheese
Salt and pepper, to taste
Instructions
Step 1: Prepare the Filling
Heat 1 tbsp oil in a pan.
Sauté the onion and garlic (optional) until fragrant.
Add the longganisa meat and cook until browned. Break up into crumbles.
Let cool slightly and mix in the grated cheese.
Step 2: Prepare the Chicken Breasts
Lay the chicken breasts flat. Using a sharp knife, cut a pocket in each chicken breast without slicing through.
Season inside and outside with salt, pepper, garlic powder, and paprika.
Step 3: Stuff the Chicken
Stuff each breast with the longganisa and cheese mixture.
Secure the opening with toothpicks.
Step 4: Sear the Chicken
Heat 2 tbsp oil or melted butter in a pan over medium heat.
Sear each stuffed chicken breast for 2-3 minutes per side until golden brown.
Step 5: Bake or Finish Cooking
Option 1 (Oven Method):
Transfer seared chicken to a preheated oven at 180°C (350°F) and bake for 15-20 minutes or until cooked through.Option 2 (Stovetop Method):
After searing, cover the pan and cook over low heat for 10-15 minutes, flipping halfway through, until chicken is fully cooked.
Step 6 (Optional): Make the Sauce
In a separate pan, simmer cream and cheese until slightly thickened.
Season with salt and pepper to taste.
Pour over the cooked chicken breasts before serving.
